2 Seasonal Recipes

1. Tambouli (salad)

  • Ingredients for 4 persons:
    • 4 tomatoes cut into very small cubes
    • 3 bunches of finely - cut parsley
    • ½ a bunch of finely - cut mint
    • 70-100gr. of cracked wheat  
    • juice from 3 lemons
    • 4 onions finely - cut
    • Salt, pepper, oil
  • Method: We soak the cracked wheat in water for 5 hours. We strain it and place it in a towel so that part of its’ humidity is absorbed. We mix it with the parsley, the mint, the onions and the tomatoes. We beat the oil with the lemon juice and the salt and pepper well and we pour it. It is advisable to leave the salad in the fridge for an hour before we serve it.

Variation: you may add finely – cut pepper, coriander, celery or olives.

2. Mussel – pilaff with wine sauce

Ingredients for 4 persons:

    • 2,5 φ.τ. fluffy – cooked rice
    • 250 gr. cleaned mussels
    • 2  κ.σ. peas
    • 2 κ.σ. sweet - corn
    • 2 κ.σ. cubed carrot
    • 2 large onions
    • 3/4 cups oil

For the sauce:

    • 6 γ.κ.σ. mayonnaise
    • 1 φ.κ. white wine
    • 6 κ.σ. ketchup
    • 1 κ.γ. hot mustard
    • ½ a clove of mashed garlic
    • salt
    • pepper

Method: Boil the mussels in very little water. Strain them, without throwing away the broth. Saute the finely – cut onions, peas, carrot, sweet – corn and mussels in oil for 1 – 2 minutes, continually mixing. Add the broth and water so that their total (broth + water) is 6,5 φ.τ. When it boils add the rice, turn down the heat and add the salt and pepper. Mix well all the ingredients of the sauce, except the wine, which you add at the last moment before serving it. Place lettuce leaves on a dish and empty the cold rice from a cake form. Pour the sauce.
